John E Hail Jr & Wendy Hail- Entrepreneurs

We are two Christian people dedicating Hail's Holy Smoked BBQ & more! to the One True God. We saw the restaurant as a mission field. Everyday people entered as strangers but usually leave as friends.

 

In the beginning, as you walked through the door you would hear Christian music playing from the television. The decor included bardwired cross, metal heart cross combination, a Christian fish made from a horseshoe, and a wood burnt sign with God's blessing on it. On the back of our shirts was their mission statement from a book in the Bible, "So, whether you eat or drink, or whatever you do, do all for the glory of God" 1 Cor 10:31.

 

The restaurant was a balanced blend of Texas style BBQ and New Mexico specials.

 

John was born and raised in Deep East Texas. His hometown is Joaquin, which is located on the north end of Toledo Bend Reservoir. John left the Pineywoods of East Texas in 1984 as he enlisted in the United States Air Force. He was stationed at Cannon AFB, Clovis, New Mexico for 5 1/2 years. Through a series of life changing events he met Wendy and settled in New Mexico.

 

Wendy was raised in Eastern New Mexico, San Jon and Tucumcari. Wendy has always had a passion for cooking and preparing dishes that made tastebud crying for more. Being raised by a single mother, Wendy spent quite a bit time in restaurants, helping her mom. Wendy owned her own tamale business for 13 years before opening Hail's Holy Smoked BBQ & more!.

UPDATE: The Hails are now living in San Antonio, Texas. Their vision is to open a food truck one day and rebirth Hail's Holy Smoked BBQ & more! with the same great food, service, and atmosphere.

 

 

 

 

 

Our smoker was custom built in Dallas, Texas by the A.N. Bewley Fabricators.

 

The model 800 Bewley barbecue pit is12’ in length and is ideal for our smaller restaurant.  This wood burning pit came with an internal firebox delivering heat and temperature through a flue system giving us that great wood smoked flavor.  The pit is thermostatically controlled and fully insulated. It operates on approximately a cord of wood per month. It is handcrafted from durable carbon steel with a flat black finish and features large easy open doors for maximum access to all three flat racks and each rib, sausage, brisket, or pork loin that are cooked. Finish is custom painted to match our Holy Smoked logo heart, RED.

The cooking capacity is approximately:
25 - 12 # briskets
4 - 30 # cases of ribs
100 whole chickens
30 - 8# pork butts

About Our Smoker
About Our Name and Logo

We were often asked about the origin of our name and logo. With the restaurant being a ministry for our faith, we saw it as God's restaurant. Hail's Holy Smoked  BBQ & more!seems like a perfect name.

The logo has a deep meaning as well. The heart represents God giving us the desires of our hearts; our own business and a ministry to reach out to others. The wings are for Angel Fire, New Mexico; where it started! The smoke, of course is for the BBQ. And the halo is a symbol of God's blessing over the business.
